Something that happens to me enough to bug me to get off my lazy *** and post a thread on Smashboards is when I have been attacking with aerials and my opponent is knocked diagonally behind or in front of me.

Usually they do one of three things:
1) Fall back in towards me diagonally from above, usually because I knocked them off the stage grounds
2) Fall away from me
3) Aim to fall above me and attempt to attack

So often I have trouble pursuing opponents in these situations.

Situation 1: When an opponent is floating in towards me diagonally above, should I Nair, B/Fair, Uair, or stay on the ground and get ready for their landing? I always tend to attempt to intercept them in air, however in this situation it doesn't work very well.

Situation 3: Uair or get on ground? I would usually get on the ground but that ends my offensive streak and forces me to go back to being defensive, which may not be bad but I generally don't lean towards that action, since it gives them a chance to build up damage on me.

What happened to situation 2? But yeah, from what it sounds like, projectiles could be your best bet. You're boomerang has a versitile hit area, bombs are good all around, and arrows for those getting away.

Falling away from me forces me to decide whether to get in close or launch projectiles from away, and since there's no action that could continue my offensive streak there isn't much to discuss. Any response to situation 2 depends on the player, the opponent, and the overall situation at hand.
