Unless it's projectiles and you're a mega slow character. :D
Link on Sheik isn't 'that' bad.
As long as the Sheik isn't professional-core.

You'll be blocking before the Sheik dash-attacks you so you won't be sent into the air.
Then you turn around (if necessary) and grab.
Or you could just use someone like Falco, Fox, Marth or Peach and stand a better chance. =]
