They do not stop until there are no more centurions left. Also, if the opponent has been KO'd in a one on one match, and he stays on his spawning platform, they continue to fly at him but do not hit, so they are not saved until the opponent is vulnerable again.
As for the number of them, I can check that now.
edit/ It is difficult to count them since they keep coming out for a short amount of time. If i had to make a guess, I'd say about 12-15...?
