I really like Smashville online due to less lag.
But offline, Final Destination and Battlefield are pretty good candidates as well

Smashville. Aside from the music, It's a decent stage. It's great for 1on1s since FD is way too long.
Also, Lylat Cruise. I find that more enjoyable than Battlefield. ^__^

If it's just for fun, Spear Pillar. Laser shielding, upsidedown or flipped gameplay, and Bob-omb Underground blitzing FTW!

As for standard stages, Lylat Cruise and Delfino Plaza.
